Our wines reflect the landscape of our vineyards and their terroir, conveying the care with which the vines are treated. They are extremely aromatic wines with notes of the wild fruits and flowers of our vineyard. They are very fresh with a light touch of acidity, marked by their shallow and slightly acidic sandy loam soils. The Rías Baixas D.O. Albariño is a young, dry and intensely aromatic wine, regarded as the best white wine from Spain.
Our Pazo Pondal liqueurs and orujos are prepared with Albariño grape pomace and come from our vineyards. After a slow fermentation, they are distilled in a still using only the traditional drip method, utilizing the central portion of the distillation, the “heart”, containing the highest quality spirit.
The 2014 vintage was the result of a winter with mild temperatures and little rainfall. After a rainy spring with a cooler than usual May and continuous rain, we headed into a summer with low temperatures and abundant rainfall. These changes led to a significant delay in the maturation of the grapes. Fortunately, in late September to early October we enjoyed warm days that provided very aromatic, fresh and more acidic musts than usual.
The grapes selected for Leira Pondal come from plots found in the vineyards of El Rañado, Torre and El Alto. These are higher altitude vineyards with less humidity, more ventilation and a greater temperature variation between day and night. As a result, we obtain grapes with slower maturation and wines with greater aromatic intensity and acidity, which are lighter and fresh on the palate. The plots are planted with a trellis system and face north and southeast.
Their location allows them to be continuously ventilated and bathed in sunlight, ensuring optimum quality and maturity of the clusters. These plots were harvested on 28, 29 and 30 September. The soils on these parcels have a pH of between 6.4 and 6.2. The soils are high in organic matter that compensates for the shallowness of the soil (30-40 cm) and improves the retention of water and nutrients.
Our Premium brand. Grapes selected for Pazo Pondal come from Leira Longa, a lower altitude plot that provides less acidity, more body, and greater concentration in the wines. It is characterised by its shallow, acidic granite soils with a pH of 5.8. It is the only estate using a traditional trellis system, which allows greater aeration of the bunches and protects them from direct sunlight.
It is one of the winery’s oldest plots and its grapes were harvested at optimum maturity on 26 and 27 September. The soils are high in organic matter that compensates for the shallowness of the soil (30-40 cm) and improves the retention of water and nutrients.
The grapes selected for Lenda come from plots located in the vineyards of Las Barrocas, Torre and El Alto. These are higher altitude vineyards with less humidity, more ventilation and greater temperature variation between day and night. As a result, we obtain grapes with slower maturation and wines with greater aromatic intensity and acidity which are lighter and fresh on the palate. The plots are planted with a trellis system and face north, northeast and southeast.
Their location allows them to be continuously ventilated and bathed in sunlight, ensuring optimum quality and maturity of the clusters. These plots were harvested on 27, 28 and 29 September. The soils on these parcels have a pH of between 6.5 and 6.2. The soils are granite and shallow, high in organic matter that compensates for the shallowness of the soil (30-40 cm) and improves the retention of water and nutrients.
The soils of our farms have the appropriate skills to extract the maximum potential of each variety and to produce unique wines respecting the typicality of the area. The plot has an east-west orientation and has a peculiar microclimate. We understand the needs of each sub-plot to obtain low yields and higher quality grapes, from which we can obtain maximum expression thanks to its altitude and steep slope. The Godello is one of the most appreciated white varieties, due to its quality and scarcity, since it is only found in Bierzo and in a part of our Galician land, the Denomination of Origin Valdeorras.
The personality of the wines Made from this white grape variety transmit the terroir of the area through floral, mineral and ripe fruit, such as apple and quince. It favors low temperatures of fermentation and aging on its fine lees, which make the Godello a unique, elegant, complex and fresh wine. The harvest is carried out from mid-September to the end of October. All the vintage is done manually, in boxes of 15 kg. Before entering the winery, the grapes are carefully selected by expert hands. Godello Pazo Pondal, elegance and aromatic complexity where the floral and fruit notes stand out together with mineral nuances characteristic of the area. Fresh and oily, long-lasting and in the mouth with a soft and persistent finish.

Traditional and partially ecological through regeneration of soils with reproduction of microorganisms. Manual harvest in boxes of 20kg. Only flower must without pressing. Cold maceration. Controlled fermentation. Aging on its own lees in order to increase its volume and intensity in the mouth. The wine remains in fine-grained French oak barrels for 14 months.
Enveloping nose where the balsamic, mint and eucalyptus notes stand out. These are accompanied with light notes of elegant pastries, cream and honey. The citric part stands out in the form of orange peel and quince. It presents an interesting minerality and a light smoked touch. The palate has a broad, full body, very well balanced by good acidity. A very lively wine, where the fruit stands out with a great elegance on the palate and a very long aftertaste.
Traditional and partially ecological by means of regeneration of the soils with reproduction of microorganisms. Manual harvesting in boxes of 20kg. Single wort flower without pressing. Cold maceration. Controlled fermentation. Aging on their own lees, shaking them twice a week for 6 months.
Fermentation controlled at 16º -17º in stainless steel tanks.
Wine with good aromatic intensity and complexity, which highlights the fusion of the predominant aromas of citrus fruit and flowers on delicate mineral memories and pleasant notes of mint. The palate is tasty and very fresh. The impression is of a wine of great character but at the same time fresh and youthful, that fills us with a powerful structure and unctuous sensation. Also appear the aromatic notes highlighted on the nose, leaving a long and very pleasant after taste.
Our liqueurs are obtained from natural maceration which consists of separating the soluble components of the best herbs, coffee and fruit, leaving them to rest in the spirit for several months in barrels. This thorough selection process is fundamental, as it marks the personality of the quality grade.

Pazo Pondal does not use any type of flavouring or essence in the production of its orujos and liqueurs. All our products are derived from a production process based on natural ingredients.
Traditionally made from orujo spirits macerated in barrels with a selection of at least 10 medicinal herbs from Galicia. Besides possessing recognised digestive properties, it is the traditional artisan liquor of Galicia, which has become the perfect way to round off a delicious meal. It has a clean, bright lemon-yellow colour with golden reflections. It is very aromatic with herbal nuances, while still being soft and exquisitely delicate.
On the palate: soft and silky with balanced sweetness.
Aftertaste: Fresh and balsamic.

Elaboration: Liqueur elaborated by macerating the best coffees of Cerrado area (Brazil) with `Aguardiente de Orujo from Galicia ́ for 31 days. After this time, it is filtered and sugar is added until its perfect dissolution. Then, it remains at rest twelve months before being bottled.
Tasting notes: Powerful and intense aroma, with citrus notes, cocoa, vanilla and dried fruits.

Elaboration: Dairy-based liqueur with high fat content, which provides it unctuosity and a long lasting finish. Aromatized with natural extracts, where a taste and fragrance of toffee and vanilla is added.

Bright toasted colour, whith a delicate and harmonious bouquet and vanilla, toasted almonds and caramel hints.Its soft and slightly sweet finish leaves a pleasant reminiscence.
Alcoholic Strength: 40% vol.
Elaboration: Aguardiente of wine derived from the vinification of Albariño grapes. After its fermentation, the distillation takes place, obtaining a distillate of a high alcoholic strength which is called `holandas ́. Then, it is aged in French and American oak barrels, which were toasted in advance. After aging for, at least, eight years, it is removed from the barrel and watered until reaching the desired alcoholic strength. Finally, it remains at rest for a year before being bottled.
Tasting notes: Bright toasted colour, with a delicate and harmonious bouquet and vanilla, toasted almonds and caramel hints. Its soft and slightly sweet finish leaves a pleasant reminiscence.
